    • 3 large eggs, separated
    • 75g granulated sugar

Instructions:

  1. Prepare the Chocolate Mixture:

    • Melt the chocolate and butter together in a double boiler or in a microwave-safe bowl. Stir until smooth.
  2. Combine Wet Ingredients:

    • In a separate bowl, whisk together the egg yolks and sugar until pale and fluffy.
  3. Combine Dry Ingredients:

    • In another bowl, sift together the flour and salt.
  4. Combine Wet and Dry Ingredients:

    • Gradually fold the flour mixture into the egg yolk mixture, alternating with the melted chocolate mixture. Be careful not to overmix.
  5. Beat the Egg Whites:

    • In a clean bowl, whisk the egg whites until stiff peaks form.
  6. Fold in Egg Whites:

    • Gently fold the egg whites into the batter in three additions, being careful not to deflate the egg whites.
  7. Portion and Bake:

    • Divide the batter evenly among ramekins or small bowls.
    • Bake in a preheated oven at 180°C (350°F) for 10-12 minutes, or until the cakes are set on the outside but still gooey in the center.
  8. Serve:

    • Dust the cakes with powdered sugar and serve immediately with vanilla ice cream, whipped cream, and chocolate sauce.
