Sri Lankan Pol Roti with Chili Paste

Ingredients:

  • 100g of grated coconut
  • 150g of all-purpose flour
  • 50ml of water
  • 1/2 tsp of salt
  • 1/2 tsp of baking powder
  • 2 tbsp of vegetable oil
  • 2-3 green chilies
  • 1 clove of garlic
  • 1 tbsp of vinegar
  • Salt to taste

Kitchen Tools Needed:

  • Mixing bowl
  • Rolling pin
  • Pan
  • Spatula
  • Serving plate

Instructions:

  • In a mixing bowl, combine the grated coconut, all-purpose flour, salt, and baking powder.
  • Gradually add water to the mix and knead until a soft dough forms.
  • Divide the dough into two equal portions and roll each into a flat circle using a rolling pin.
  • Heat a pan over medium heat and add 1 tbsp of vegetable oil.
  • Cook each roti on the pan for about 3-4 minutes on each side until golden brown.
  • While the rotis are cooking, prepare the chili paste by blending green chilies, garlic, vinegar, and salt in a blender until smooth.
  • Serve the hot pol roti with the spicy chili paste on the side.
