Sri Lankan Fish Kebabs

Ingredients:

  • 500g firm white fish (e.g., tilapia, cod, or mahi-mahi), cut into 1-inch cubes
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red chili powder (adjust to taste)
  • 1/4 teaspoon turmeric powder
  • Juice of 1 lime
  • Salt to taste
  • Wooden or metal skewers
  • Oil for grilling

Instructions:

  1. Marinate the Fish:

    • In a bowl, combine the fish cubes, onion, garlic, ginger, coriander, cumin, chili powder, turmeric, lime juice, and salt.
    • Mix well to coat the fish evenly.
    • Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  2. Prepare the Skewers:

    • Soak wooden skewers in water for 30 minutes to prevent them from burning.
    • Thread the marinated fish cubes onto the skewers, leaving some space between each piece.
  3. Grill the Kebabs:

    • Preheat your grill or grill pan to medium-high heat.
    • Brush the skewers with oil.
    • Grill the fish kebabs for 4-5 minutes per side, or until they are cooked through and slightly charred.
  4. Serve:

    • Remove the kebabs from the grill and serve immediately with your favorite dipping sauce, such as a spicy chili sauce or a creamy yogurt sauce.
